Festive Xmas Energy Balls

Recipe
(makes 12-15)
200 g Dates (Medjool)
50 g Pecans
50 g Hazelnuts
65 g Dried Fruit (Cranberries, Apples, Sultanas)
2 TBSP Chia Seeds
Zest of 1 Orange
1TBSP Orange Juice
1/2 TSPN Ground Cinnamon
1/4 TSPN Ground Nutmeg
1/4 TSPN Ground Ginger
Pinch of Sea Salt
100 g Dark Chocolate (at least 70 %) for coating, and some festive sprinkles
Mix the dates, nuts, and dried fruit in a food processor until they have the consistency of sticky dough.
Add the chia seeds, orange zest and juice, the spices and sea salt, and process until everything is well combined.
Roll your sticky dough out into bite size pieces.
Melt the dark chocolate in a pot over hot water.
Coat the balls with the liquid chocolate, then transfer them onto a tray, sprinkle with your decoration of choice, and put in the fridge for at least 2 hours so the chocolate can harden up again.
They keep up to 5 days in the fridge!
