Why Berries are the best
Berries are extremely high in antioxidants (especially blueberries, raspberries and blackberries), which help protect from damage by free radicals, and act as an anti-inflammatory.
Berries are high in (soluble) fibre, which makes us feel full and less hungry, and their net-carbohydrate content is comparably low due to their high fibre content. Therefore, berries are a great food to help control weight and calorie intake.
Berries are very nutritious. They contain vast amounts of vitamin C (especially strawberries), and high amounts of vitamin K, manganese, copper and folate.
Berries may help reduce wrinkles, due to the antioxidant ellagic acid, which stops the production of enzymes that break down collagen in (sun-damaged) skin.
Berries keep the heart healthy by lowering LDL (Bad) Cholesterol, and by supporting endothelial cells, which help control blood pressure and keep blood from clotting.
Recipe
(makes 10-12)
100 g Mixed Berries (fresh or frozen)
80 g Oats
30 g Desiccated Coconut
1 TBSP Chia Seeds
1 TBSP Coconut Oil, softened
1 Pinch of Sea Salt
40 ml Agave Syrup
Mix all ingredients in a food processor until you reach the consistency of sticky dough (add some oats and chia if the dough is too wet)
Roll out small balls (about 2 cm diameter), put them in an airtight container, and let them set for a couple of hours in the fridge.
They keep up to 7 days in the fridge or can be frozen for up to 1 month.
