Carrots
Carrots contain vast amounts of antioxidants, most famously beta-carotene, which the body converts into vitamin A. These and the antioxidant lycopene help protect the body from damage by free radicals, and they help prevent cancer, especially prostate, colon and stomach.
Beta-carotene also promotes good vision (especially night vision)
The high amounts of vitamin K and C, biotin, and fibre in carrots have a positive impact on bone strength, cardiovascular health, cholesterol, and they help control weight.
Cinnamon
This spice is fantastic when it comes to protect our immune system from coughs and colds, especially in the winter months, as it stimulates circulation.
It acts as a blood thinner (contains coumarins), and reduces LDL (bad) as well as total cholesterol. It also has a positive impact on our digestive system due to its antimicrobial and anti-inflammatory properties.
Its potential regulative impact on insulin may help reduce blood sugar levels.
Recipe
(makes 12-15)
100 g Pitted Dates
200 g Carrots (feel free to use different colours), grated
50 g Almonds
75 g-100 g Oats (depending on how moist the dough is at this point)
30 g Desiccated Coconut
1 TBSP Chia Seeds
1½ TSPN Ground Cinnamon
1 TSPN Date, Maple or Agave Syrup
Mix the dates and almonds in a food processor until you have a sticky base.
Add the carrots to the mix, and then stir in the rest of the ingredients. If the dough feels too wet, add some more oats.
Roll out into bite size balls and coat them in some more desiccated coconut and sprinkle with some more cinnamon. Put them in an airtight container and let them set for a few hours in the fridge.
They keep up to 5 days in the fridge or can be frozen.
